Strangely I am just prepping to do this myself, the tools that you are looking for are rendom. It is not a small undertaking and you will want to do some serious planning beforehand. If you are running a later version of Exchange you will need to uninstall before performing the rename then reinstall and restore it. Other tools like Certificate services will also need to be removed and restored during the process.
